HEAVENLY CREAMY FLAN

1/2 cup sugar
1 cup milk
1/8 teaspoon salt
1 can (14 oz.) sweetened condensed milk
4 eggs
1 teaspoon vanilla
DIRECTIONS
- Over medium heat, place sugar in small heavy skillet and heat until sugar begins to melt and syrup turns golden. Immediately pour into a one quart baking dish that fits into pressure cooker. Tilt dish in all directions to coat bottom and as much of the sides before syrup stops running; set aside.
- In bowl or blender, mix remaining ingredients until smooth. Pour into prepared baking dish and cover tightly.
- Set covered dish into cooker; pour hot water into cooker to come half way up the sides of the baking dish.
- Close lid, bring to high pressure, then lower heat and pressure cook for 9 minutes.
- Remove from stove and allow pressure to drop naturally.
- Take flan out of cooker and serve warm or cold, as desired.
