BASIC LENTILS
Serves 4
Lentils need a bit of seasoning to brighten their earthy flavor.
1 tablespoon olive oil
1 cup lentils, picked over
2 cups stock or water
1 cup bell pepper, diced
2 cloves garlic, minced
1/2 teaspoon dried thyme
DIRECTIONS
- In the pressure cooker, heat the oil over moderate heat and add the garlic. Sauté until transparent. Add the remaining ingredients and stir well. If using water instead of stock - add 1/2 teaspoon of salt.
- Lock the lid in place, bring to high pressure. Stabilize the pressure and cook for 12 minutes. Release the pressure and serve.
