BASIC LENTILS

Serves 4


Lentils need a bit of seasoning to brighten their earthy flavor.


1 tablespoon olive oil
1 cup lentils, picked over
2 cups stock or water
1 cup bell pepper, diced
2 cloves garlic, minced
1/2 teaspoon dried thyme


DIRECTIONS

  1. In the pressure cooker, heat the oil over moderate heat and add the garlic. Sauté until transparent. Add the remaining ingredients and stir well. If using water instead of stock - add 1/2 teaspoon of salt.
  2. Lock the lid in place, bring to high pressure. Stabilize the pressure and cook for 12 minutes. Release the pressure and serve.

Pressure Cooking Time: 12 minutes
