BLACK BEANS AND CHORIZO SAUSAGE

Serves 8


1/2 tablespoon vegetable oil
1/4 pound dried Spanish chorizo sausage, finely chopped
1 cups chopped onions
1 small chili pepper, finely minced
Salt
Freshly ground black pepper
2 tablespoons chopped garlic
1/2 pound dried black beans
4 cups chicken stock
1 tablespoon butter


DIRECTIONS

  1. Add the oil to the pressure cooker. When the oil is hot add the sausage and brown for 2 minutes. Add the onions and peppers. Season with salt and pepper to taste and sauté for 3 to 4 minutes or until the vegetables are wilted.
  2. Stir in the garlic and black beans. Sauté for 1 minute. Add the stock, close the lid, and bring to high pressure.
  3. Cook for 45 minutes.
  4. Release pressure using the cold water release method.
  5. Open cooker, stir in the butter and re-season with salt and pepper.
