Sauerkraut & Apple Pork Chops

DIRECTIONS
1. Heat the oil. Season the pork chops with the salt and pepper. Add 2 chops to the cooker and brown uncovered for 2 to 3 minutes per side. Remove to a platter and brown the remaining chops.
2. Place the sweet potatoes in the bottom of the pressure cooker. Layer the pork chops and apples over them.
3. In a small bowl, combine the apple juice, brown sugar, and cinnamon; mix well and pour over the pork chops. Top with sauerkraut, making sure not to fill the cooker more than two-thirds full. Close and lock. Bring to pressure on high heat. When stabilized, reduce the heat to medium and cook for 10 minutes at high pressure.
4. Release pressure using cold water method. Remove the lid and serve the pork chops with the sweet potatoes, apples, and sauerkraut, spooning sauce over everything.
