CARIBBEAN BEEF ROAST

You’ll be whisked away to a tropical location when you try this sumptuous beef roast. The citrus flavor in this dish combines perfectly with the spiciness of the peppers. For extra flavor in the meat, try marinating the roast for at least 3-4 hours in the beef bouillon, garlic powder, black pepper, nutmeg, limejuice and vinegar.


1 1/2 cups water
2 pounds lean trimmed chuck shoulder roast
1 tablespoon fresh chopped cilantro
1/4 cup chopped onion
1 teaspoon garlic powder
1/4 cup chopped celery
1/2 cup chopped green bell pepper
1 teaspoon cracked black pepper
1/4 teaspoon nutmeg
1 red jalapeno, diced
1 tablespoon fresh chopped parsley
1 tablespoon fresh chopped thyme
1 tablespoon beef bouillon granules
1 tablespoon limejuice
2 tablespoons red wine vinegar
Cooked rice with crushed pineapple*


DIRECTIONS

  1. Place the trivet and steamer basket inside the pressure cooker and add 1 1/2 cups water. Place beef in steamer basket and surround with vegetables and fresh herbs.
  2. In small bowl, combine beef bouillon granules, garlic powder, black pepper, nutmeg, limejuice and vinegar. Stir well and spoon over beef.
  3. Close lid, bring up to high pressure, then lower heat and cook for 25 minutes. Release pressure using the automatic release method. Prepare rice while beef is cooking, adding I cup crushed pineapple to rice.
  4. Serve beef with vegetables and pineapple rice.
