CORNED BEEF AND CABBAGE

Serves 6


2 cups water
12 ounce bottle of lager beer
2 medium onions, peeled and cut in half
2 garlic cloves
3 pound corned beef brisket with spice packet
4 medium red potatoes, cut into 1" pieces
4 medium carrots, cut into 1" pieces
1 small cabbage, cut into wedges


DIRECTIONS

  1. Add water, beer, onions, garlic, and corned beef with spice packet into pressure cooker. Close the lid and bring to high pressure. Cook for 1 hour. Release pressure using the natural release method.
  2. Transfer meat to serving plate and cover with foil. Add 1/4 cup water or beef stock to pressure cooker to deglaze pan. Place potatoes, carrots and cabbage in the cooker. Close lid, bring to high pressure and cook for 6 minutes. Release pressure using the cold water release method.
  3. Slice corned beef against the grain and serve with vegetables on the side.
