RICE WITH CHICKEN & CHORIZO SAUSAGE

Serves 6


2 tablespoons olive oil
1/2 green bell pepper, chopped finely
1/2 red bell pepper, chopped finely
1/2 cup green peas, fresh or frozen
1/2 cup sweet corn, fresh or frozen
1/2 pound chicken breast, cut into small pieces
1 chorizo sausage (about 6 oz.), cut into small pieces
1 cup Spanish rice (or short-medium grain, Arborio type)
4 cups water


DIRECTIONS

  1. Heat the olive oil over medium heat in the pressure cooker and add the peppers. Sauté for 5 minutes or until they begin to soften. Add the peas and sweet corn and cook for another minute. Next, add the chicken and chorizo sausage, mix well, and sauté for 2 additional minutes. Finally, add the rice, stirring, allowing it to absorb the olive oil. Cover with 4 cups of water.
  2. Close the lid and bring to high pressure, then lower heat and cook for 6 minutes. Release pressure using the automatic release method, remove the lid and serve.
