CHICKEN CACCIATORE


Chicken Cacciatore

Serves: 4-6

Pressure Cooking Time: 12 min


INGREDIENTS

  • 3 tablespoons olive oil
  • 2 pounds boneless chicken breast, cut into 2 inch cubes
  • ¼ cups chicken broth
  • 1 cup white cooking wine
  • 14 ounce sliced mushrooms
  • 1 large onion minced
  • 2 teaspoons garlic powder
  • 1 small bunch fresh basil
  • 1 small can tomato paste
  • ½ teaspoon thyme

DIRECTIONS

1. Heat olive oil and brown chicken breast for approximately 5 minutes. Add rest of Ingredients.

2. Close the lid and bring to pressure. Cook for 12 minutes at high pressure (or for 21 minutes at low pressure). Release the pressure and remove the lid.

3. Serve with pasta, preferably spaghetti.
