TUNA STEAKS IN OLIVE OIL

Serves 8


2 pounds tuna steaks, 1” thick
2/3 cup extra virgin olive oil
2 cloves garlic, crushed
2 tablespoons coarsely chopped parsley
4 bay leaves
2 teaspoons salt
Pinch crushed red pepper flakes
1 cup water
2 teaspoons minced parsley
1 lemon, cut into wedges


DIRECTIONS

  1. One hour before steaming tuna, prepare marinade in a small bowl. Mix together olive oil, garlic, parsley, bay leaves, salt and red pepper. Set aside.
  2. Pour the water in the pressure cooker. Lightly grease the steaming basket with the vegetable oil. Place as many tuna steaks in the basket as can fit in a single layer. It will be necessary to steam in at least two batches.
  3. Close lid and bring to high pressure. Cook for 3 minutes. Release pressure using the cold-water release method and carefully remove the steamer basket.
  4. Place the steaks on a platter and prick each steak a few times. Pour the marinade over the tuna through a strainer. Spoon marinated herbs over tuna steaks and marinate tuna for 2 hours.
  5. Garnish tuna with minced parsley and lemon wedges.
  6. Serve over bed of steamed spinach or over a crisp spinach salad.
