TUNA STEAKS IN OLIVE OIL
Serves 8
2 pounds tuna steaks, 1” thick
2/3 cup extra virgin olive oil
2 cloves garlic, crushed
2 tablespoons coarsely chopped parsley
4 bay leaves
2 teaspoons salt
Pinch crushed red pepper flakes
1 cup water
2 teaspoons minced parsley
1 lemon, cut into wedges
DIRECTIONS
- One hour before steaming tuna, prepare marinade in a small bowl. Mix together olive oil, garlic, parsley, bay leaves, salt and red pepper. Set aside.
- Pour the water in the pressure cooker. Lightly grease the steaming basket with the vegetable oil. Place as many tuna steaks in the basket as can fit in a single layer. It will be necessary to steam in at least two batches.
- Close lid and bring to high pressure. Cook for 3 minutes. Release pressure using the cold-water release method and carefully remove the steamer basket.
- Place the steaks on a platter and prick each steak a few times. Pour the marinade over the tuna through a strainer. Spoon marinated herbs over tuna steaks and marinate tuna for 2 hours.
- Garnish tuna with minced parsley and lemon wedges.
- Serve over bed of steamed spinach or over a crisp spinach salad.
