• 2 tablespoons canola oil
  • 1/4 cup applesauce
  • 2/3 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1 egg
  • 1/2 cup apple pulp
  • 1 cup all-purpose flour
  • 1 1/4 cups rolled oats


In bowl combine canola oil, applesauce,  brown sugar, cinnamon, and baking soda. Stir until combined. Mix in apple pulp and egg. Add flour, a little at a time. Stir in oats.

Drop tablespoons of dough onto greased cookie sheets about 2 inches apart. Bake at 375 degrees for 10 minutes or until lightly browned. Makes about 2 dozen.
