SHRIMP PAELLA

Serves 2


1 pound medium-sized shrimp, cleaned and peeled (reserve shells)
1/4 cup tomato paste (or puree)
1-2 cloves garlic
Pinch of saffron
1 cup short-grain rice
1 3/4 cups hot "shrimp water"
1 cup green beans and/ or lima beans
2 tablespoons olive oil


DIRECTIONS

  1. In saucepan, lightly cook green beans (or lima beans) in salted water. In another pan, boil only the shells in salted water for 10 minutes to make the “shrimp water”.
  2. In pressure cooker, add 1/4 cup olive oil with tomato paste and stir until hot. Reduce heat, add rice, green beans, saffron and shrimp. Mix well and add “shrimp water".
  3. Close lid, bring to high pressure, then lower heat and cook for 8 minutes. Remove from heat and let the pressure release naturally. Remove the lid and serve.
