Milk-Poached Fennel

Serves: 4-6

Pressure Cooking Time: 2-3 min*


  • 2 small or 1 large fennel bulb, sliced
  • 1 teaspoon flour
  • 2 tablespoon butter
  • 2 cups whole milk
  • 1 pinch salt
  • Nutmeg, grated


1. Melt the butter in the pressure cooker on medium heat.

2. Add the fennel slices and lightly brown them on one side. Turn them over and sprinkle with flour, salt, freshly grated nutmeg and pour on the milk.

3. Close and lock. When the cooker reaches pressure, lower the heat and cook for 2-3 minutes at high pressure (or for 5-6 minutes at low pressure). When time is up, release pressure.

*Note: Cooking times vary depending on portion size, heating method and other possible variables. We recommend you cook your meal until the minimum time and add additional cooking time if needed for meal completion.
